Vegan Date and Walnut Scones with Cashew Coffee Cream

There is something so comforting about a freshly baked scone still warm from the oven. This recipe is made with wholesome ingredients like spelt flour and coconut oil and is free of refined sugar – it’s lightly sweetened with naturally low GI coconut sugar, and dates.

Activated walnuts add a satisfying crunch and texture and these are even more delightful served with decadent cashew coffee cream. Ingredients:

Scones

  • 4 cups spelt flour
  • 1 teaspoon baking powder
  • 1/3 cup coconut sugar
  • 1 cup Medjool dates, chopped 
  • 1 cup walnuts, chopped 
  • ½ teaspoon cinnamon
  • 1 cup coconut oil, chilled 
  • 1 ½ cup almond milk, chilled

Cashew Cream

Method:

  1. To make the cashew cream, cover cashew nuts with cold water and soak overnight.
  2. Drain and rinse cashew nuts, then add to a blender with coffee and rice syrup.
  3. Blend until smooth and creamy. Set aside.
  4. Preheat oven to 230° C and line two baking trays with baking paper.
  5. In a large mixing bowl combine spelt flour, baking powder and coconut sugar.
  6. Add coconut oil a little at a time and rub into flour mix with fingertips until a crumbly consistency is reached. Add chopped dates and walnuts and combine.

  7. Slowly pour in chilled almond milk and gently mix using a wooden spoon. Take care not to over mix.
  8. Turn onto a floured surface and shape into a round, roughly 2cm thick. Using a large knife cut into eight triangles. Place on to the prepared baking tray, brush with a little extra almond milk and bake for 12-16 minutes until golden and crispy on top.
  9. Serve warm cut in half with a generous dollop of coffee cashew cream.
  10. Store in an airtight container for two days or freeze.
